I’ve been consuming loads of vegetables with chickpeas, beans, and lentils, but for once I wanted something with a stronger taste, and this beet and Roquefort salad with a honey dressing is the result. The sweetness of the honey dressing, and the beetroot contrast the powerful taste of Roquefort. For the texture I dry roasted a few buckwheat grains, with the arugula they make up the crunchy side of the recipe, while for the softness there’s the cooked root and the cheese. This is something I would easily serve during a dinner with friends, either as a starter, or as a side.

Beet and Roquefort Salad with a Honey Dressing

 

Recipe for 3-4

Prep time: 15 min

 

Ingredients:

4 tbsp. buckwheat

200 g peeled cooked beetroots

50 g arugula

60 g Roquefort

 

Dressing:

1.5 tbsp. runny honey

1.5 tbsp. white wine vinegar

1.5 tbsp. rapeseed oil

Salt and pepper

 

Recipe:

In a pan toast the buckwheat on a medium fire for 4-5 min, shake pan regularly. Remove from pan once they’re crunchy and fragrant.

Cut the beetroot into chunks of about 2 cm. On a serving plate, alternate the arugula leaves, the beetroot pieces, the buckwheat grains, and crumble the Roquefort on top.

In a bowl, mix the ingredients for the dressing, and drizzle on top of the salad.

Besides being a city I absolutely fell in love with, I also often enjoyed having the nice sandwiches you could find around town. Actually, I don’t think I’ve ever eaten as many sandwiches as during that year. Among my favourite combinations was one I often chose, with goat cheese and honey. Thinking about that year made me want to eat something similar and so I made these toasts. In this recipe I added some beetroots and arugula because they add taste, texture and the eye also wants its part. These toasts can work for a quick lunch (1-2 p.p.) maybe with a salad, or a brunch or whenever you feel like it.

 

 

Goat Cheese Toasts

Recipe for 4 pieces

Prep time: 5-10 min

Cooke time: 15-20 min

 

Ingredients:

4 slices bread (1.5-2 cm thick, I used brown bread)

Butter

120 g goat cheese log

2 tbsp. sour cream

2 tbsp. dry roasted pine nuts

4 tsp. runny honey

12 thin beetroots wedges (a few millimetres thick)

Arugula leaves

Pepper

 

Recipe

Heat oven at 180°C.

Spread a little butter on each side of the bread slices and place them in the oven until lightly toasted, about 5-7 min.

Meanwhile crumble the cheese in a bowl and add the sour cream with some pepper. Mix the ingredients together.

Take the bread slices out of the oven and spoon over the goat cheese sour cream mix. Replace the slices in upper part the oven and cook them for about 15 min. Once the cheese starts to slightly brown, take them out.

Drizzle 1 tsp. honey over each slice, then; on each bread piece place 3 beetroot wedges and a few arugula leaves on top. Sprinkle with the pine nuts as a finishing touch. Serve.

So I got ready and took the ten-minute walk to the bus stop (under the rain). For once the hourly bus was on time and I had just taken my seat when my phone rang: it was the dentist’s assistant telling me that he was ill and that my appointment was to be postponed. I continued my journey into town for some groceries anyway and a nice coffee break with a childhood friend of mine. I came back it was past noon and since I wasn’t in a hurry, I walked at slower pace, taking the time to look at the surroundings and their changing red autumn colours. The way home is partly on a dirt path among the fields and as beautiful as it may be; I couldn’t help but notice that some people still haven’t learned not to littler in the nature. I found wrappers and cigarette butts. Personally it saddens me to see how little people care and how little they realize the harm they are doing. Well, I ended up staying there and picked up what I could find and placed it in the bin which was just a couple of meters away (I admit I cursed a little at whoever did this). Once I got home I wrote this blog post and searched for an appropriate quote:

Recipe for 4 as a starter

Prep time: 12 min

Cook time: 4-5 min

 

Ingredients

For the salad:

2 cooked beetroots

2 apples

100 g soft green salad or arugula

1 onion

200 g goat cheese log

1 egg

4 tbsp. breadcrumbs

4 tbsp. chopped walnuts

1 tbsp. olive oil

 

For the dressing:

2 tbsp. balsamic vinegar

2 tbsp. olive oil

2 tbsp. walnut oil

1 tbsp. runny honey

Salt and pepper

 

Recipe

Cut the beetroot into 2-3 cm chunks.

Peel and core the apples and roughly cut into the same size as the beetroots.

Thinly slice the onion.

In a small bowl mix together the balsamic vinegar, olive oil, walnut oil, honey and salt and pepper to taste.

On each plate, place the salad leaves and on top add the beetroots, apples and sliced onions.

Cut or break with your hands the goat cheese into pieces of about 3-4 cm. In a bowl break the egg and beat it with a fork. In a second bowl place the walnuts and the breadcrumbs. First pass the cheese pieces into the egg wash and then roll them in the walnut breadcrumb mixture.

Heat the olive oil in a non-stick pan and add the breaded goat cheese to cook for 2-3 minutes, until they start getting soft but are not too runny.

Finally add the dressing just before serving the breaded goat cheese and serve.

Yesterday I had my weekly lunch with my mother and usually I make something vegetarian since we both like it but this time I wanted to make something a little different and so I came up with these mince chicken skewers and this honeyed carrot salad. With the chicken I paired some Emmentaler cheese that has a relatively sweet taste and its flavour goes well with the chicken meat and the honeyed carrot salad.

Cheesy Chicken Skewers with Honeyed Carrot Salad

Recipe for 4

Prep time: 20 min

Cook time: 10-12 min

 

Ingredients

For the chicken:

600 g chicken minced meat

2 tbsp. breadcrumbs

2 tbsp. thyme leaves

1 tsp. mustard powder

optional: cayenne pepper

4 tbsp. grated Emmentaler cheese

1 large spring onion – only the bulb

salt and pepper

2 tbsp. olive oil

 

For the carrot salad:

3 tbsp. olive oil

1.5 tbsp. cider vinegar

1 tbsp. runny honey

salt and pepper

1 tbsp chopped parsley

3 grated carrots – not too large ones

1 finely chopped spring onion (white part only)

 

Recipe:

For the carrot salad, in a bowl combine the olive oil, cider vinegar, honey, salt and pepper. Mix well and add the carrots and parsley. Toss and leave to macerate.

Meanwhile in another bowl mix the minced chicken, breadcrumbs, thyme, mustard powder, grated cheese, salt, pepper and optionally the cayenne pepper. Finely chop the spring onion and add it to the rest of the mix. Blend all together and divide the mass into 8 equal parts. Take one part and with your hands form sausage like shapes; repeat with the rest of the meat. Insert a wooden skewer stick into each “sausage”.

Heat 2 tbsp. olive oil and place the skewers to colour on all sides and allow them to cook through for 10-12 minutes.

Serve the salad with the skewers and some crusty bread.

I don’t eat a lot of cookies but I found out that when there are people around I seem to enjoy them more.  I went ahead and made this “Magenbrot” recipe and a few hours later they were gone: I kept a few and with the rest I made little packages and them to my mother and her boyfriend and a few other friends. It was some time I had wanted to try this recipe of “Magenbrot”. Although I am not a huge fan of candied fruit, it’s a must in this recipe. My recipe from an old Swiss cookbook from Betty Bossy only called for candied citrus fruits (lemons and oranges) but I found some cherries. I prefer the taste of candied cherries so I replaced the orange with the ruby colored fruits.

Magenbrot – Swiss Honey Tidbits

 

Prep time: 25-30 min (+ one night rest)

Cook time: 25 min

 

Ingredients:

For the dough:

250 g honey

250 g sugar

500 g flour

25 g ground melba toasts

1 tsp cinnamon

¼ tsp ground cloves

50 g candied cherries chopped

50 g candied cherries chopped

¾ tsp sodium bicarbonate

¾ tsp cream of tartar

1 ¼ dl milk

 

For the icing:

300 g sugar

1 dl water

40 g dark chocolate

 

Add the honey and sugar to a pan and heat to 60°C. Constantly stir and control the heat with a meat thermometer.

In a bowl mix the flour, the melba toast, cinnamon, ground cloves, candied cherries and lemons. In another recipient mix the sodium bicarbonate and the cream of tartar with the milk and add to the honey and sugar. Add the four mix, quickly knead, cover and leave to rest for the night.

Heat oven at 180°C.

Divide the dough into 8 parts and roll out until it reaches 2 cm diameter. Line 2 baking trays  with parchment paper and place four portions in each leaving a space of at least 4 cm between them. Place in oven for 15 minutes. Once ready let them cool and cut to make 2 cm slices.

Prepare the icing by placing in a pan the 300g sugar with 1 dl water. Bring to a boil while stirring and add the chocolate cut into pieces to melt. Stir again to mix in the chocolate. Take a quarter of the cookies, place them in the icing and stir gently to coat them. Place on a rack to dry. Repeat with the rest of the cookies. In case the icing should be too liquid place on fire and reduce. In case the icing is too thick, add some water. Store the Magenbrot in a closed cookie jar.

I have already mentioned this place but since I cannot go there at the moment I wanted to try to make this cabbage and apple salad. This salad is part of a dish served with a venison tartar and even if it was in the first course in the autumn menu I found it more than enough. So the grotto is closed but I can still have their food. Tonight I’m going out with a couple of friends to the ice skating ring they have set up in the Piazza Grande in Locarno; around the ring is a bunch of stands and one of them is occupied by Davide and his chef Carlo from the grotto. Last week we got there too late and it was closed so this time I hope we can make it. Anyway, ice skating is not really in our plans…

Cabbage and Apple Salad with Honey Dressing

 

Prep time: 10 min

Recipe for 2

 

Ingredients:

250 g shredded cabbage

1 apple

1 tbsp honey

1 tbsp cider vinegar

2 tbsp olive oil

Salt and pepper

2 tbsp roasted walnuts

 

Recipe:

Peel the apple, cut it into four parts and core. Take each piece and cut it lengthways into four. Turn the apple quart and slice into 0.5 thick pieces. Add to the cabbage.

Chop the walnuts and add ¾ to the salad.

In a bowl mix together the honey, the vinegar, the olive oil, salt and pepper to taste. Add to the cabbage and apple and blend well. Place on a serving plate and sprinkle with the remaining walnuts. Serve with crusty bread or game and why not some cheese…
